Production notes
Typically ripening two weeks before our Cabernet Sauvignon our Cabernet Franc grapes are picked by hand, sorted and lightly crushed into one ton open fermenters. Yeast was added and the cap was punched by hand twice per day for 24 days. After the fermentation was complete, the "free run" was drained off of the skins into barrel. The wine was then aged 18 months in 25% new French oak, 25% new American oak with the remaining 50% aging in neutral oak.
